i've only put one recipe up on our blog and it was for my MIL=) this one is for anyone who ever finds themselves in a situation where you have ALOT of fresh veggies at your house and you don't want them to go bad=) of course vegetable soup is always a good solution for that, but not during the summer!
so anyway, our local whole foods store has teamed up with a farm that's just outside of charleston. basically, you can pay a flat amount and receive a variety of fresh produce in a box for 13 weeks...you pick up your big box of produce every tuesday. the lucy family didn't participate in this....we didn't know about it, but we may consider it next time. BUT our friends kyle and amy did. and they are out of town for the week so they very generously gave us their produce box for this week. i went to whole foods and picked it up on tuesday.
it varies from week to week, but this week there were several ears of corn, squash, tomatoes, eggplant, zucchini, potatoes, watermelon, peppers, and cantaloupe inside. we will get into that watermelon on saturday. as for the veggies, we wanted to find a recipe that would incorporate as many as possible so none of it would go bad. sk and i are leaving sunday morning to go to folkston for the night and then over to amelia for our june girl's beach trip with mimi, ash, and the twins. sooo.....trey got online and found a recipe courtesy of giada de laurentiis from the food network called 'greek caponata'. it was YUM and it included almost all the veggies we were given! the only thing i had to pick up at the store was a red onion. this dish would be perfect over linguine or thin spaghetti. we had it over jasmine rice which we love, but i think i might boil some linguine tonight for the leftovers. we were supposed to have grilled fish BUT a storm FINALLY came through so i just cooked some ham instead - we'll do fish tonight as long as it isn't raining. we were grateful for the rain! it doesn't smell smokey outside today at all. so anyway, if you ever find yourself with a huge box of veggies or if you just want to make something that is full of yummy veggie goodness then click HERE and get the recipe. our neighbors are always leaving a big bag a veggies at our doorstep...so sweet!
