recipe.

my MIL asked for this recipe and i keep forgetting to email it to her so i thought i'd put it on my blog. we made it for sk and she loved it, but we also really enjoyed it so now i try to make it every other week for us all to enjoy. great side dish=) i got it from the fumc cookbook: feeding the flock. i use suzanne's recipe on p.218 (mrs. latrelle....you may have that book). and if you have a health food store nearby then it's easy to make mostly organic and/or all natural. happy eating!

*green bean & corn casserole

ingredients:

1 can white shoepeg corn -drained

1 can french style green beans -drained

1 can cream of celery soup (my mom used cream of chick. soup and it was yummy too....another recipe below suzanne's uses cream of mushroom....so whatever you want.)

1 cup grated cheddar cheese
1 cup sour cream
1/2 cup chopped onion

1 roll of ritz crackers (crushed for top)
1 stick of butter, melted


mix all ingredients together except for ritz & butter. put in small casserole dish. put ritz crackers on top and then drizzle the butter on top of crackers. bake at 350 for 30 minutes.
what good is a post without a pic so here's a pic....i made it today which is what reminded me to share the recipe. sk will have a sitter tonight so this is an easy dinner to leave....scoop, heat and serve! enjoy!
